Job Purpose

 

Under the close supervision of the FHS head and the GH Associate, the person is responsible for the breakfast preparations and other morning routines. This person will also assist the chef/associate in making sure that the kitchen is organized and food coming out is according to the menu and recipes.

This position will be based at the IRRI Headquarters, Los Baños, Philippines and may only be filled by permanent citizens of the Philippines.

 

Roles and Responsibilities

 

  • Open the kitchen for the daily service
  • As directed by the GH chef, plan and execute duties related to breakfast meals, salads/vegetables, and dessert items for guests and staff at the GH;
  • Prepare and cook food according to recipes and standards
  • Prepare and cook staff meals for the day
  • Observe food safety protocols in all areas of kitchen operations
  • Suggest and try new dishes which can be added to the GH repertoire
  • Ensure that the kitchen station is prepped and stocked with daily ingredients; mis en place
  • Receive and check quality and quantity of deliveries
  • Arrange and store deliveries promptly and properly
  • Monitor expiration dates of food supplies
  • Maintain kitchen hygiene by regular cleaning and sanitizing of equipment and appliances
  • Maintain order in the pantry and cold rooms
  • Maintaining a clean work environment by following safety regulations, such as wearing appropriate personal protective equipment (PPE)
  • Prepare and update documents like food inventories, and menus
  • Perform basic troubleshooting of kitchen equipment and appliances
  • Ensure that tools and equipment/appliances are taken care of through proper handling and that they are in good working condition
  • Monitor borrowed ISH keys
  • Provide waitering service to guests, as needed
  • Process and facilitate requests like work orders in the OCS
  • Liaise with service providers (PPS/IKS/SSS/ENTOM/External suppliers) to monitor progress of work orders/requests at the GH/ISH kitchens
  • Go on shifting/overnight duties and welcome/send off guests
  • Monitor housekeeping tasks of service providers at the GH kitchen
  • Mis en place for the day ready and well-stocked
  • Breakfast service on time
  • Stock room and inventories are in order

 

Qualifications

 

  • High school degree with 3 years relevant work experience; or 2 years college education and with minimum 2 years experience in fine dining kitchen operations

 

Skills Required

 

Mandatory

  • Has basic cooking, plating, and knife skills;
  • Has basic knowledge in MS office (Word and Excel); Google suite
